1 – Hayden Whole Wheat Single Rise Bread

Number of Servings: 8

Ingredients:

  • 2 packs of rapid rise yeast
  • 3 tbs sugar
  • 1 tbs salt
  • ¾ cup oatmeal
  • 3 cups of whole wheat
  • 3 cups of bread flour (hold ½ cup for kneading)
  • Mix all dry ingredients well
  • 2 ¼ cups water at 120 degrees
  • 5 tbs oil
  • Mix water and oil together, then add to dry ingredients

Directions:

  1. Blend all ingredients together until well mixed.
  2. Add flour to the mixture until not sticky.
  3. Let dough rest 5-10 minutes.
  4. Spray 2 bread pans with Pam.
  5. Cut dough ball in half.
  6. Shape each ball into loaf shapes.
  7. Place bread in pans and let rise 60 minutes.
  8. Bake 20-25 minutes at 350-375 degrees until lightly brown on top.

2 – Dirty Martini Dip Boating Recipe

Ingredients:

  • 8 oz. cream cheese, softened
  • 4 oz. chopped jalapenos
  • 8 oz. jar green olives, drained, chopped, reserving liquid
  • 4 scallions, chopped including tops
  • Pinch of black pepper
  • 2 cloves garlic, minced
  • ¼ tsp garlic powder (optional)

Directions:
Combine all ingredients except liquid from olives. If you need to thin it, consider adding the extra liquid or even vodka.

Ingredients:

  • tbs melted butter
  • tbs soy sauce
  • tbs hot chili sauce
  • Veggies (any combo you like): broccoli, onions, red pepper, cauliflower, zucchini, etc.

Directions:

  1. Coat large piece of aluminum foil with Pam.
  2. Cut veggies into bite-sized pieces/ sprinkle with salt and pepper.
  3. Mix all ingredients and pour over veggies.
  4. Fold foil over tight and then turn around and fold additional large piece over veggies.
  5. Grill over medium to low heat for 10-15 minutes.
  6. Flip and grill for another 10 minutes.

4. Satin Smooth Fudge

Number of Servings: 8+

Ingredients:

  • 11 oz. evaporated 2% milk
  • 4 ½ cups of sugar
  • 1 stick butter
  • Two 12 oz. bags of milk chocolate chips
  • 12 oz. marshmallow fluff
  • 2 tsp vanilla extract

Directions:

  1. Mix sugar, milk, butter in large pan and bring to steady boil for 5 minutes, stirring slowly and constantly.
  2. Turn heat to low and stir in chocolate chips with wooden spoon.
  3. Turn off heat and add fluff and vanilla.
  4. Mix by hand until smooth and starting to set.
  5. Pour into buttered 11×17 pan and let cool.
  6. Cut into 1-inch squares.

5 – Wild Rice Salad

Number of Servings: 6

Ingredients:

  • One 6 oz. box Uncle Ben’s long grain &
  • wild rice (follow directions)
  • One 6 oz. jar marinated artichoke hearts
  • ½ cup green peppers, chopped
  • ½ cup red onion, chopped
  • ½ cup celery, chopped
  • 10 cherry tomatoes
  • 1 ½ tbs cider vinegar

Directions:

  1. Drain and chop artichokes, reserving marinade.
  2. Mix in together rice and all veggies.
  3. Whisk vinegar into marinade.
  4. Pour over rice mixture and stir well.
  5. Chill for 2-3 hours before serving.

6 – EZ Crab Appetizer Boating Recipe

Number of Servings: 6

Ingredients:

  • 1 can crab
  • 8 oz. cream cheese
  • Horseradish
  • Ketchup

Directions:

  1. Open cream cheese and place on dish.
  2. Mix together horseradish and ketchup (cocktail sauce).
  3. Empty crab on top of cream cheese.

7 – Corn Casserole

Number of Servings: 8

Ingredients:

  • 1 box Jiffy corn muffin mix (do not make mix)
  • 1 can cream corn
  • 1 can regular corn (drained)
  • 1 cup sour cream
  • 1 stick melted butter
  • 1 cup shredded cheddar cheese

Directions:

  1. Mix together all ingredients except cheese.
  2. Pour into 9×9 greased pan.
  3. Bake at 350 degrees for 45 minutes.
  4. Pour cheese over and bake until melted.

Number of Servings: 4

Ingredients:

  • 2 cups firm white fish
  • Fresh lime juice
  • ½ medium onion, chopped
  • ½ green pepper, chopped
  • 1 tomato, chopped
  • Hot sauce
  • Crackers

Directions:

  1. Chop raw freshly caught white fish into bowl.
  2. Cover with lime juice and let soak 3 hours.
  3. Add onion, pepper, tomato to drained fish and sprinkle with salt/pepper/hot sauce. Serve with crackers.

Ingredients:

  • Refrigerator roll of croissants
  • 8 oz cream cheese
  • 3 tbs powdered sugar
  • Choice of favorite fruits
  • 1 tbs butter

Directions:

  1. Roll out croissant dough flat onto cookie sheet.
  2. Soften butter and cream cheese. Dab butter on dough.
  3. Bake for package instructions.
  4. Mix soft cream cheese and powdered sugar and spread over dough.
  5. Cut all fruit and spread out on top. Slice and serve.

10 – Pete’s Pub Cole Slaw

Number of Servings: 6

Ingredients:

  • 16 oz bag slaw mixture
  • 11 oz can pineapple tidbits
  • 4-6 tbs pineapple juice
  • ¾ cup chopped walnuts
  • ½ cup mayo
  • 2 tbs milk
  • 2 tbs cider vinegar
  • Salt and pepper
